Foodoso is not a vote aggregator. It's a project for culinary authenticity. Our vision is simple: to help anyone, anywhere and with any dietary need, find and taste the best possible version of a territory's traditional dishes. We do it with rigor, independence and the conviction that quality is the only thing that matters.
The Principles of Our Work
Our methodology is not a secret algorithm, but a set of rules we follow without exception.
1. We review the dish, not the restaurant
Our focus is precise: we review individual traditional dishes, not the venue as a whole. We're interested in the recipes that made Italian cuisine history. We describe ingredients, cooking techniques, pairings, history and origins of each preparation. Our goal is to highlight only the dishes that reach their maximum expression.
2. We gather all available information
For each dish analyzed, we don't limit ourselves to our judgment. We collect and cross-reference as much information as possible about its quality and reputation. We report reviews and comments from gastronomic guides and external sites, to offer a complete view that goes beyond a single point of view.
3. We also look for lesser-known places
True value is often found far from the spotlight. We strive to discover and review niche trattorias and osterias, perhaps excellent but little known, that operate outside mainstream circuits and marketing logic. For us, quality comes before any commercial logic.
4. Our reviewers are anonymous
Those who evaluate for Foodoso are not influencers or amateurs. Our reviewers are selected from people who deeply know a specific type of dish: history, secrets, evaluation criteria. They act in complete autonomy, without conflicts of interest. To protect their freedom of judgment, they remain anonymous.
5. We always pay the bill
Our reviewers always pay in full when they visit restaurants. We don't accept discounts, gifts, invitations or any form of benefit that could influence the judgment. We only evaluate what ends up on the plate.
6. We are independent and self-funded
We fund ourselves exclusively through donations from our community. We don't accept influence or advertising from advertisers or other external parties. Our independence is the foundation of our credibility.
7. Those who don't deserve it, don't get mentioned
Our rankings are not lists of failures. The Top 10 by category are reviewed and updated regularly, to ensure that the best dishes get the visibility they deserve. We don't review dishes we consider subpar. The lack of inclusion is itself an indication.
