I visited Flavio Al Velavevodetto on two occasions and I can say it is one of the most solid and authentic Roman restaurants I have frequented. The location in Testaccio is beautiful, tastefully decorated, with its bottles on display and the glass windows overlooking the characteristic pottery shards that give the neighborhood its name: an atmosphere that immediately puts you at ease. The kitchen is generally of a high standard. The carciofo alla giudia is a sure thing: crispy outside, soft inside, flavorful to just the right degree. Among the first courses, the cacio e pepe proved to be excellent, the amatriciana very good, while the carbonara only half convinced me: the choice of rigatone penalizes the dish, creating an annoying alternation between flavorful mouthfuls and almost bland ones, despite the guanciale being truly remarkable. The tiramisu was also memorable, substantial and rich without being heavy. A note goes to the service, which in the past I found a bit cold and distant for a restaurant so deeply Roman. Overall, however, Flavio Al Velavevodetto remains an essential stop for anyone who wants to eat the cuisine of Roman tradition with quality ingredients and expert skill.
