The story of our visit

First visit:  

We went because Eggs was listed in something like 4 out of 7 rankings for Rome's best carbonara. Well, let's just say after trying it, we're not entirely convinced by the hype.

The place is in Trastevere, quiet area, a few tables outside but with construction work going on, which isn't exactly ideal. Inside it's not that big. The whole philosophy revolves around eggs, as the name suggests.

We ordered a trio of strapazzi, which are basically carbonara pasta friitters skewered on a stick like ice lollies: classic, truffle, and 'nduja. Good stuff, but honestly there's zero difference between the classic and the 'nduja one. Then there were meatballs called Cacio e Ova with tomato. That was a no. The texture was mushy, it just didn't make sense.

The carbonara. So: the mezze maniche cooked perfectly, creamy sauce done well and generous, crispy and flavorful guanciale. All good so far. Except they serve it in this giant oversized Bormioli jar that's tall and narrow. The first few forkfuls? Bland. The last bites at the bottom? Too much sauce. It's a clever trick because that final mouthful leaves you satisfied, but honestly this unevenness doesn't sit well with me at all. We also tried the purple version with caramelized onion, which sweetens the whole thing. Nice if you love experimenting, but I'm a traditionalist.

Oh, the maritozzo with pistachio mascarpone was excellent. The tiramisù was good too, not too sweet, though maybe a bit too much mascarpone.

Friendly service, prices above average. More of a one-time experience than somewhere to come back to often.
